Chinese Chicken Fried Rice .



Ingredients
Long Grained Rice                            -              2 cups (Cooked & water drained)
Chicken                                             -              1 cup (Boiled & shredded)
Chicken Cubes                                  -              2 nos
Garlic                                                -              8 to 10 cloves (thinly sliced)
Spring Onions                                    -              2 Nos (only tail)
Cabbage                                            -              1 cup (shredded or thinly sliced)
Carrot                                                -              ½ cup (shredded)
French beans                                     -              ½ cup (thinly chopped in length)
Capsicum                                           -              1 large (thinly sliced in juliennes)
Soya Sauce                                         -              2 Tablespoons (or as per taste)
Salt                                                     -              As per taste
White Pepper powder                        -              Just a pinch or two.                                        
Oil                                                      -              2 tablespoons (or as required)

Method
Heat oil in a wok. Add sliced garlic and sauté till the aroma releases. Keep the flame high. Now add sliced onion and sauté for a minute. After that add sliced cabbage, carrot, French beans, capsicum & shredded boiled chicken & chicken cubes. Toss it well; add salt as per taste and cover for 1 minute. Remove the cover and stir once, and then add soya sauce; mix it on high flame till the soya smell evaporates. Now finally add cooked rice and a pinch of white pepper powder to it and mix or toss it well on high flame. Serve hot with Manchurian or Sichuan sauce.
Tips – You can add schezwan sauce to the rice to give it a spicy flavor.
Note – Ajinomoto is replaced by salt , which is a healthy option for kids too.
